I WANT TO HAVE A SPREADSHEET ADD AND SUBTRACT THE NUMBER OF PEOPLE IN AND OUT OF OUR ESTABLISHMENT AND NUMBER OF BEDS AVAILABLE…HOW DO I ENTER THIS INFO INTO THE CELLS SO IT WILL CALCULATE THE CHANGES AS THEY OCCUR?

That is not a Calc question. You need to get some basics on how to use a spreadsheet.
