I think we're all familiar with, for example, trying to move slideshows from mac to pc and vice versa (and from version to version) and how much fun that can be. If I create a presentation in impress on one, will it show up fine on the other?

In general, yes. Though the devil is in the details, e.g. if you happen to have reams of wonderful commercial fonts installed on the Mac, perhaps from Adobe's Creative Suite, and use those - then they'll miss on the Windows side (and of course vice versa).
If you want to hold a presentation on a random laptop, say, at a conference, the most portable way is to export to PDF. That then also embeds all needed fonts.
