I have a document with two paragraph styles, Main and Sub1. Within each style of paragraph there are some italic characters. I want to select the italics separately within each style and apply a different character style to each, e.g.

Italics in Main paragraphs become Main+Italic character style
Italics in Sub1 paragraphs become Sub1+Italic character style

I can select all italics with Find and Replace/Find All, but when I try and couple that with a paragraph style or another text format or attribute, it either misses some of the italics or picks up all the non-italicised text.

It's relatively simple for me to produce the document with these styles in different fonts, e.g. Times New Roman for Main and Arial for Sub1, if that makes it easier.

I'm getting very frustrated with this: is there really no way for Writer to combine a style search with a format search?

You should try "Alternative dialog Find & Replace for Writer", where you have powerful tools to select very particular styles and character properties by "Caracter Properties - Based on Cursor position", what can be edited manually.
