When I add a reference, it appears like this: [Author's full name] , when I'd like for it to appear like this: (Author's last name Year)

How do I customise the reference so that it takes exactly the shape I want? I want to know how to do this for the bibliography at the end too.

There are plenty of solutions to achieve this. My general advice would be to use Zotero with its dedicated LibreOffice plugin, which offers good integration and a bunch of very useful features.

While I appreciate Zotero as well, I would also like to know if it is possible to customize the inserted entry.

Yes it is. In the dialog in which you select the fields to copy in your document, you can add text between the chosen fields, and you can choose the paragraph style to be applied.
