I'm working on a large document which has a sequence of image numbers. Later additional chapters might be added, so I'm wondering how I can set up the index (number underneath with a description) of the images to be automatically updated in case new images are inserted at a later occasion?

Add an image or two...
Right-click on image
Select: Caption...
Choose desired settings
Insert Index to your document via: Insert > Indexes and Tables > Index and Tables...
Choose Type: Illustration Index
The Index itself is updatable via right-click on the titel-row (of the Index) , choose: Update Index/Table
That's it.
