You didn't mention your OS and how you installed LO.

If you install through package managers or configurable installers, you can select which part you want (or delete unwanted ones afterwards). Usually, you have a core part (always needed) and component parts for writer, calc, draw, impress, mail-merge and various filters.

I have a graphic virtual machine with KDE, LO, PostgreSQL, Apache, Python and many others installed. The "system" partition is as small as 6GB with a full LO installation.

YMMV but it essentially depends on the volume of your personal data. Keep at least 10% free space for proper OS operation.
