If you are using a laptop its possible that the touch pad is sensitive and when you are typing you can accidentally trigger to touch pad as a mouse click which sets the cursor back to the position of the mouse pointer.

After using the mouse pointer to select where you want to type you could move the mouse pointer to a different position to try and confirm this is the problem.

It may be better to disable the touch pad and use a separate mouse, or try changing the sensitivity settings of your touch pad.
