I'd like to know where and how to change the LibreOffice Icon that appears in the Taskbar inWindows 7?

This site seems to have instructions for you.

Basically you find the shortcuts in the folder %appdata%/Microsoft/Internet Explorer/Quick Launch/User Pinned/Taskbar and then change their icons with the usual method.
