With some programs, I am able to ‘talk’, and the program will ‘type’ what I speak. Is that possible in LibreOffice for Mac?

No, that is not a feature of LibreOffice. But it is possible using other software, in combination of LibreOffice. For example a program called “Dragon Naturally Speaking”. Please also see following link: Can Libre Office work with Dragon speech recognition
