When I click previously entered text, instead of inserting the cursor and allowing me to enter new text, it deletes text forward from the highlight. How do I turn this off?

For example if I wanted to enter a space, tab a paragraph or enter new words, it deletes what is forward from the highlighted text. Is this a glitch? How do I solve this problem?

You have switched on ‘Overwrite’ mode. Hopefully you see the ‘StatusBar’ (bottom). There you get the hint. Press the ‘Insert’ key once. Done. It’s not a cursor problem.
