How to limit the use of attributes in writer

Is it possible to load and edit Writer as a standalone app? We want to use Writer to enable the user to open and use templates that are interactive. This was a commercial venture. Now, we want to develop this for dementia sufferers to exercise their minds.

I want to create less complexity within the toolbar/canvas/interface, where I only will need about 9 or 10 buttons: open, save, new, print, insert, spellcheck, zoom, forward - back, upper - lowercase, color. Needs to be really simplified.

Could you elaborate a bit more? A more precise description would help to understand what you want to achieve.

Then, @Lupp gave the answer.

Standallone Writer does not exist, but you can start LibO using swriter.exe (on Win , this).
You also can reduce the UI (menus, toolbars, keyboard shortcuts to the needed minimum via Tools > Customise.
In the same way you can provide additional action (callin “macros” e.g.) by clicking icons or shortcut keys.

You can customize the user interface to make it more accessible. A good example is the French OOo4Kids and OOo
Light project (no longer maintained?) with its own skin and reduced menus and toolbars.
