Everytime I try to apply a style to a specific block of text, the program applies the style to the entire document. Basically it’s only allowing me to select one style per document. What am I doing wrong?
It can be as they are only one paragraphs even it seems several, because there are new lines [shift+enter] instead new paragraph [enter]
There is an extension Alternative search and replace that allows replace new lines by new paragraphs.
Please note that standard F&R dialog also allows replacing the newlines with paragraph breaks - as mentioned in the help, \n
means line break when in Find text box, and paragraph break when in Replace box.
Whenever I come across this the reason is as m.a.riosv suggests
If in doubt, check by displaying the formatting marks Writer by:–

Select Tools>Options>LibreOffice Writer>Formatting Aids to get a dialogue where you can choose which marks are to be shown. Check at least “Paragraph end”, “Non breaking spaces”, “Tabs”, and “Breaks”.

If necessary, turn on their display by selecting View>Formatting Marks.
You should see lots of paragraph end marks, few or no break marks.
This might seem elementary, but I recommend keeping the marks displayed all the time you are working. They show up some very common slips as they happen.
