10:15 - 09:15 = 00:59 when I use cell format “[HH]:mm” for the cell that does the calculation (=A1-B1).
When I use “HH:mm” it is 01:00, correct.
The “[” and “]” are for not limiting it to 24h. Seems like a bug to me.

10:15 09:15 01:00 HH:MM
10:15 09:15 01:00 [HH]:MM
May be you provide a anonymized testfile showing your result
