I would like to know if there is a decent extension, or maybe native capabilities in LibreOffice, to display data in a spreadsheet on a map.
For example, coloring countries based on GDP, things like that.

This is beyond Calc and don’t see any enhancement/extension which would ever come about.
Your question deals with mapping and data overlays. This is usually done using a commercial product like Mapinfo or an open source project such as QGIS.
Databases, such as PostgreSQL, used in these applications also should be able to handle geometry. See this post → Loading geometry in Base causes hanging, crash.
Once a map is completed, most mapping software allow the exporting as an image elsewhere.
