In English (USA) language environment of LibreOffice this is the default - see Tools -> AutoCorrect -> AutoCorrect Options ... -> Tab: Replace. Scroll down until you see an "i in column Replace and watch the according value in column With, which is an I.

According to your "Answer" I need to assume, that the setting doesn't work for you. To get more help. please specify your language settings, your operating system and your LibreOffice version. As stated in my comment above, if you are using English(USA) as your language the autcorrection you are asking for should work out-of-box, provided you have Tools -> AutoCorrect -> Optiom: While Typing ticked.
