Which type of chart (line, scatter, ..... there a plenty types)? Have you got a sample file to upload? There must be differences in charts working and those which don't. And it's impossible to recognize from a distance without a fortune teller.

It is a line chart. The axis is supposed to show dates and that is what cell references refer to, but instead it shows the numbers from 1 to 32 (that is not what is in the data). I have since noticed other charts where the place to change the axis is also grayed out, but I'm not trying to change those since they read correctly.

I just went into the same chart and found that the area in Data Ranges for Categories (which populates the x axis) was blank. I filled in the proper range and now everything is fine, although I did check the number tab and everything is still grayed out there. Problem solved.
