The message "preparing to copy to “Applications” and the blue scroll bar are still visible? Is that a sign that it hasn’t finished downloading?

Correct: I’m using an iMac with macOS. The message is still there after all these hours. The blue scroll bar filled to the end, but shouldn’t it disappear when it’s finished copying?
The install status window with the progress bar should disappear when install is finished. However, sometimes the status window hangs in there even though the process is completed. You can force-quit it or reboot.
If I recall correctly, LibreOffice will not insert a persistent link in your dock. You will have to do that yourself.
Installed apps should appear in the Mission Control screen. Swipe sideways to see whether you have multiple pages in the Mission Control.
You can also find it using Finder, in the Applications folder. Finder - cmd+shift+A.
