When I open Libre Office writer the layout is now as a booklet, how can I restore back to “normal” layout
You might have inadvertently changed the view mode. See the 4 little icons near the lower right hand corner of the Writer window. Click on the left-most one. Hope this helps.

or use: View -> Zoom -> Zoom... -> Section: View Layout -> Option: [o] Single page
