How do I change the default font to apply to all new documents?

Make or import a Template and right click on it to set it as your default Template with everything set up the way you want is probably the easiest way.

If you don’t want to create your own template (as suggested by @JEDIMASTER) or don’t know how to, there is another procedure, not as powerful and complete as a template because it only targets the default font and nothing else.

Go to Tools>Options, LibreOffice Writer>Basic Fonts (Western). You can now set the font and size for various contexts:

  • Heading for the Heading n family of styles (chapter headings)
  • List for the List n and Numbering n collections (does not apply if you just use the toolbar buttons to make lists)
  • Caption (well, you guess its target)
  • Index for the TOC and index entries
  • Default for all other styles

This configuration is saved in your user profile and is thus available for all future documents.

Note that a custom template is much more versatile as you can configure all styles and even provide initial content for a blank document.
