In the latest update, it seems the styles and formatting panel has become built into the right side of the document itself. However the line items of styling panel have disappeared. See example: http://imgur.com/CRbHsG9
I guess that it is possible that the programmers have gone customisation mad & made it possible to remove all the icons (I’m not going to experiment & end up there myself). On my own system (Debian 6.0 + LO 5.0.0.5) & going:-

F11((menu):Format→Styles & Formatting...)
…with default settings this brings up the sidebar, which also contains a vertical panel on the RHS for selecting different sidebar options. At the top of that panel is a menu short-cut, which ultimately leads to an option “Restore Default”:-
If that option is not available to you then you will need to Restore a default Profile (not at all difficult & can easily be reversed, although note that the current 5.x profile is located within an identical directory/folder to the 4.x profile).

Will the Restore Default erase all my styles?
I cannot find any information on that menu option. However, if it is available to you, then you do not have the problem that your text + image suggests.
