When I enter info for a sheet of labels in one size font(ie; 9) I click on sheet and new document and the sheet shows the data in type font 12 no matter what I pick. How do I change that?

Sounds like you might be running into defaults set up for new documents? Try navigating to Tools -> Options -> LibreOffice Writer -> Basic Fonts (Western) and changing the default Font and Size to values that suit your needs.
Don’t forget to change those values back after you are finished with your particular work project.
