I want to always open files with column type set to “Text”. Set as default so I don’t need to do this every time I open a csv file.

Sorry, I do not know how to set this by default.
As workaround you can very quickly apply this format to all columns by clicking at the intersection of the row and column headers (all fields are selected) and then choosing the format that applies to all columns. So, only 2 clicks… HTH.

Attached contains macro and some instructions on how to use it. When you open a csv file it saves the csv file format that was used and then it can be re-used by running the command that is added to the toolbar.
