MS Word has a function enabling the formatting of pasted text to match destination formatting ie changing the format of the text from the original to that of the destination. How can this be done in Writer?

Use Ctrl+Shift+V rather than Ctrl+V to paste, and then select 'Unformatted text' from the popup window. Using the menu, it's Edit > Paste Special... > 'Unformatted text'.
