You tagged your question with “Calc”, so I answer for that (but in Writer it’s similar):
Hit F11 to bring up stylist window.
Create (or alter an existing) CELL style template
On second or third tab (“Font effects”) you can choose a color
Apply that style to your cells.
You may have to de-select Tools> Options...>LibreOffice Calc >View>Display> Value highlighting
