I’d like to format the text for the book printing, myself.
I cannot find the option to resize the entire text into B5 format.
I’d like to do that and then I’d convert into PDF.
Can you help, please?

To resize your document’s pages, Format->Page and choose the Page Format you like.
To export your document to pdf, File->Export as pdf
