When I am working on a large spreadsheet I am constantly interrupted by an automatic program save. I cannot find a way to either turn it off or increase the length of time between saves.
In MS-Windows :
Menu Tools → Options → Load/Save → General.
Under the “Save” heading in the General dialog box, either un-check the Auto save/recovery box or increase the time to whatever suits you.

The problem is that I can’t find that option. On my computer in Calc mode there is no “Save” headiong. Under file there are options for “Save”, “Save as” and “Save all”, but no Auto Save.
@SATOOTOKO It seems you are looking in the wrong place. The answer states from the menu Tools -> Options -> Load/Save -> General and not under File as you seem to be looking. Now it may also be because you did not state your OS (or LO version for that matter - both usually essential) that you may be on a Mac. In that case, as the LO documentation states, Tools -> Options = LibreOffice > Preferences.
