I can’t find any instructions for this at all. Do I just install 5.0 over the top of 4.4 and do it that way or is there actually an Upgrade method? The Help/Check for Updates only checks for 4.4 and tells me I’m already up to date.

I’ve got both 4.4 & 5.0 installed in tandem. Because the 1st digit of the version is different the Profiles are in different dirs. Simply install 5.0. After, leave 4.4 in place or remove - at your own desire (the process of uninstallation does not remove the Profile dir).
4.4 is part of LibreOffice Still, whilst 5.0 is part of LibreOffice Fresh. They are treated as different products, hence the Update behaviour.

Please note a correction, with many thanks to Lupp :
4.4 & 5.0 share the same Profile directory. That is different behaviour to earlier versions (the 3.x Profile was placed within a /3/ dir/folder, whilst 4.x was placed in a /4/ dir; 5.x, however, is also placed within a /4/ dir).

On Win 8.1 without any specific measures I got installed V5.0.0 replacing the 4.x.y but using the old user profile with the unchanged path ("\4"). Did you, @AlexKemp, get a user profile with “\5”?
