How do I stop libre office from taking over microsoft office file type associations?

That happened in the end of installation, the program would have asked you if you want to do so, I think. Because WPS OFFICE do that.

BTW, I don't had that chance because LibreOffice are probably the first Office I install.

Yes, as @jiero mentions, there should be an option towards the end of the installation process where you are given the opportunity to associate certain filetypes with LibreOffice. You'll want to uncheck/deselect all filetypes that you do not want to be opened with LibreOffice by default.

A short remark to above answer and comment

Associating file types with LibO cannot only be done towards the end of the installation process but also in

Tools / Options / Load/Save / Microsoft Office.

While migrating from MSO to LibO I used this possibility several times. Now I have fully migrated to LibO.

That's only for importing and exporting Microsoft Office OLE objects.
