I am used to preview stepping through all sheets as pages. Is there a setting I am missing?
Unfortunately this is a missing feature.
Edit: I just learned there is a way: Ctrl-click to select the desired sheets before entering Print preview 
Edit 2: another way: untick the option Tools - Options - Calc - Print- Print only selected sheets
