I’m new in LibreOffice so a bit confused to why the whole menu is greyed out except for “Writer Document”.
Aren’t these “extras” part of the latest file “LibreOffice_5.4.3_Win_x64.msi” like a bundle?

Absolutely unexpected. I’d advise you to start with resetting your user profile, followed in case of failure by uninstalling and installing back (not repair).
Thank you Mike! It worked, though I had to do both. Resetting the user profile didn’t work at all, but even after uninstalling the program the old files remained…so I deleted them all, thanks!
