Yes, in Google Docs you can click File > Download as > OpenDocument Format to save in the native format that LibreOffice users. Then you can edit the documents offline, and re-upload them later.

/me is not familiar with the Google apps, so please excuse for a dumb question: do those apps really have their own file format? /me was under impression that they work with something kept internally on Google servers (and so we don't know what actual data format it is there), but only available in ~standard formats offline after importing to ODF/OOXML/whatever?
