If I delete LibreOffice 4.3 will I lose all files I’ve saved w/Libre and documents created w/Libre?
By uninstalling LO, you will not lose any file you create/save with LO. Uninstallnig merely removes the program files.
Actually, you don’t even need to uninstall LO on your own. Installing a new version will remove the old one.
Try it:

make a backup of your documents on an external device (external hard drive for example)

uninstall LibreOffice 4.3 which is a very old not maintained version

install LibreOffice 6.0.6 from Download LibreOffice | LibreOffice - Free Office Suite - Based on OpenOffice - Compatible with Microsoft

try to open your documents: it should work without problem.
Deleting LibreOffice 4 will have no effect whatever on the files you have created.
There should be no problem at all in replacing your LO4 with LO6, but if you do have any concerns or doubts, try the portable version of LO6 from: LibreOffice Portable Fresh (full-featured office suite) | PortableApps.com
You can use this while leaving LO4 on your PC.
