Defaults of this kind are set in Tools>Options,LibreOffice Writer>Basic Fonts (Western). You are offered the choice of different contexts.
Heading is for use in headings, i.e. it affects Heading n paragraph styles; List will operate on all List xxx and Numbering xxx styles, Caption is used with Insert>Caption and Index is effective in table of contents or indexes.
The configuration you set is saved in user profile and survives LO closing and restart.
