I have a word document to which I have added an image header.
When I save down the document and close it then go back into it the header has disappeared.

How did you add the “image header”? Was it e.g. a PNG image pasted into a header’s paragraph (anchored as char or to paragraph?), or was the image set as the header background (area). or…?
Which specific file format did you use (DOC? DOCX?)

The image was set as the header background.
Saving it as a .doc file rather than .docx seemed to resolve the issue.

It can’t be. MS Word does not support separate background for headers - so in both its formats, this kind of formatting simply cannot be saved. Only using ODT, can you keep header background image.
