I am getting ready to write a book and would love to be able to voice record to text document

Do you want voice-to-text capability or to add sound in the document?
I get used to recording any audio with three tools of different needs:
open Audacity for free audio capture and editing;
Voice recorder of Windows 10 to save some voice memos;
RecMaster to capture any screen activity or webcam video with audio…
There are commercial tools specifically tuned for that purpose of voice dictation.
I would use those over the built-in voice recognition of the operating systems.
