Do you still have the printed resume? As far as I know, editing the text from a jpeg file would be impossible. But if you could scan the printed version into a .pdf at least, there may be hope of recovering the text and editing it. You'd have to convert it from .pdf to an editable format, and very probably not all of the text would be recognized.

Or there be a web-site somewhere that would convert your jpeg to text. Similarly to scanning your document, you'd probably lose a lot of formatting, and some of your text may not be recognized accurately.

If you google "pdf to text" you will find a number of sites where you can make an editable file from your .pdf document. If you can get it into a .doc or .docx or even .txt you can edit it in libreoffice.
