When updated to vers 6.3.4.2, found that all colors previously assigned in CALC were now gone. Is there a way to save these? Tried resetting some, saving and reopened file to find them all gone again.
Generally cannot confirm - please tell us your operating system and perform a test using Safe Mode (If you don’t lose the tab colors in Safe Mode you might face a user profile corruption)
On LO 7.0.4.2, Windows 10 2004, if a sheet is Protected and file is saved as .xlsx then that tab loses its colour on reopen. This doesn’t happen with .ods, nor, oddly, with .xls
Why with Libre Calc Version: 5.1.6.2 does tab colour NOT save???
No clear answers anywhere I have found.

Protected sheets saved as .xlsx do not display the colour correctly is a bug still in v 7.1, see tdf#122945 .
On my experiment the colour is still there on opening in Excel 2010 which correlates to your having had it but not now. If, however, the sheet is unprotected in Calc then the colour does not come back, if the sheet is then saved the colour is lost permanently.
Workaround: Always save in native format .ods
