I just wanted to know if LibreOffice will update with security updates like other software products? And if it does does this happen automatically?

LibreOffice uses time-based release scheme. If a security issue is discovered in LibreOffice, usually it is included in the next scheduled update. Sometimes an out-of-schedule extra update is released, if the problem is urgent.
Application of all updates, and those including security problem fixes, depend on your distribution. If you have an operating system which offers you a package management that installs updates automatically, you will have the updates installed according to that policy. For some distributions, such updates are not possible (e.g., for packages provided from the official site). For such distributions, you need to apply updates manually (you might receive an update notification).
So if I install the latest version for my Windows 10 computer and I install say LibreOffice 6.3.5, (wanting the one that’s been around a bit longer) from https://www.libreoffice.org/download/… will this update automatically. I am primarily wondering about security patches.
No this will not update automatically. As I said,packages from official site do not update automatically. You will get update notifications, and will be able to install them manually. However, a version on Windows Store from CIB will likely be updated automatically (as apps from the store should).
