How do I display number of pages in a document?

Would like to be able to see the number of pages in a document and what page number is displayed i.e. # of XX pages.

Your question is ambiguous.

While working in Writer

The bottom status bar shows in its leftmost box the position of the cursor as Page x of y and may even show the assigned page number vs. the ordinal page number from start of document (in case you played with the page number)

Inside a document

This information is usually inserted in a header or footer. Both informations are available through fields, respectively Page number and Page count.

Make sure that menu View -> Status Bar is enabled.
