Would you, by chance, space your letters with empty paragraphs? relying then on visual feedback to manually position them.
The feature to skip to next page is called a … page break!

. Of course, remove the empty paragraphs after the last real one in the letter.

allows you to see all the formatting codes in your document. The visual clues don’t print, so you can have this option always enabled. Very handy to solve formatting issues.
The page break can even be automated. I assume your letters have some systematic structure: they always start with the same type of data, e.g. a date paragraph, an address, … This data should be tagged with a paragraph style to distinguish them from each other…
A paragraph style may define a formatting so that these data are visually put apart from each other: with spacing above or after (quite neutral and universal), indent, another font face or weight, colour, etc.
Formatting may be the same for various styles but the important point is your paragraphs are semantically marked up.
If your letters always start with a specific type of data, the corresponding paragraph style may contain a “page break before” which will be automatically applied when you mark the paragraph.
