How to auto update chart

I have made a sheet to track several data sets in our county COVID 19 reports. After entering new data, I insert a chart by: Highlighting every row and column with data, then clicking on “insert chart”, remove any data set/sets I don’t want for that chart and then finish. I would like to have (now that I know exactly what data sets I want included in the chart) the chart auto-update as I enter new or change existing data. I have spent several hours researching this, and have tried every suggestion without success. As the data set grows larger, it is tedious to have to create a new chart every day.

If you add new rows before the last one, the new data will appear in the chart.
