I’ve run into this issue multiple times, where I click document text and can’t type, opening a toolbar menu shows an empty gray menu, hitting Ctrl+S to save opens an empty gray dialog, and closing and re-opening doesn’t bring up the recovery.
How can I get more information about the cause?

I’m afraid the only way to debug (other than using safe mode) is building LO yourself in debug mode. There’s no logging in release builds - it’s compiled out. You can’t enable it.
Your question doesn’t include LO version and OS name. Have you configured some theme? Many themes are known to cause display issues in the recent releases.
6.4.4 64 bit on Windows 10. No themes, add-ons, etc. The only extra thing was the Java option was enabled with AdoptOpenJDK jdk-11.0.6+10 64 bit.
@mikekaganski that’s a bummer. I would have thought at least errors were logged somewhere.
I tried wiping my profile out with that safe mode thing you sent, we’ll see if that helps.
Note that wiping the profile would not allow you to reliably disable HW acceleration (if it’s the problem): on start, when creating a new profile, it would detect OpenGL and enable it - and it would be the problem again. So look at the command line to enable the safe mode that allows you to configure LO to disable HW acceleration.
Or since it doesn’t prevent you from using the program, and only failing occasionally: you may start safe mode from Help menu; also you may disable OpenGL from Options▸LibreOffice▸View.
