I've converted an HTML table to ODS but all the numbers and dates have an apostrophe in front of them which only shows when a particular cell is highlighted. Is there a quick method of deleting the apostrophe in a column so that the numbers can be used in calculations?

Select the cells, choose menu Data - Text to Columns… - OK.

Tested with LibreOffice (x86); OS: Windows 6.1.
