Is there any way of increasing the size of the toolbars?
You can increase the general scaling in Tools > Options > LibreOffice > View, section “User Interface”. This is done separate for text in field “scaling” and for the icon set. Some sizes, for example the labels of the sheets on the tabs in Calc depend on the settings of your operating system. Apart from that the size of a toolbar depends on its content.
