I need to keep autocomplete from "suggesting" the end of what I am inputting in a cell, if I don't realize it is suggesting something, and I hit enter, I end up with something different in the cell.

For toogle button in: Menu/Tools/AutoInput

I think it shouldn't be default. More resonable is SHIFT + ENTER or CTRL + SPACE (last like in many programming IDE). Or even Tab is good - just type TAB once to complete and SHIFT-TAB to back, or many TABs for scroll through list of possibilities.
