LibreOffice was put on my computer by the dealer when I bought it new about three years ago. I don't know what version etc it is. My machine has Windows 7. What language, do you mean English?

After a LibreOffice update some time ago I was no longer able to find the link to change the font color. Also every time I try to copy and paste anything to a new document or just type a new document it tries to format the document without my permission and I have no control over how to manipulate it. It would be nice if, when an update or "improvement" is made a tutorial would be included also.

. . . I was no longer able to find the link to change the font color.

Check Format > Character > Font Effects > Font colour.

. . . every time I try to copy and paste anything to a new document or just type a new document it tries to format the document without my permission . . .

Hard to know what is going on with so little information. If you are copying "formatted" text, the format tries to replicate itself (so to speak).

I don't know what version etc it is.

If you mean LibreOffice version, then check Help > About LibreOffice from any of its apps (Writer, Calc, etc.) and the version number installed will be displayed.
