Basically, Fresh has the newest features (although now on v 4.2.3 with 4.2.4 coming out this week so closer to a stable version than a fresh version) but also a higher risk of weird things happening (especially when at the 4.x.0/4.x.1 stage.

A Stable version has been around for awhile (approx 6-9 months) so most of the bugs have been worked out. You would want to use this if you are a business or using the program to the extreme and desire a low risk of problems.
