If there any way to change the document background colour of only a single document? So that it doesn’t affect all the others.
E.g. Document 1 has an all grey background, while the rest are the default white.

Not as far as I know. The ‘Background’ tab has been removed from the Page Style (although do not tell the Help pages - they still live in the pleasant delusion that it still exists).
Damn stupid action.
