I am trying to utilise UcanAccess and when attempting to do this on opening the 'advanced' window, Java is not in the list in the Java options? Tried uninstalling and reinstalling both LibreOffice and Java and various Java updates and still nothing?

I think your problem is the same as described HERE. LO v5.x seems now to require a JDK instal (rather than a JRE instal as before).
