When I entre a date in the form YYYY-MM-DD, using “Insert-Fields” on re-opening the the document, Writer has change the date format to DD-MM-YYYY. How do I get Writer to accept and keep the ISO format?

In what format are you storing the document? Native LibreOffice (.odt) or something else.
hello Gary, if you right-click in your inserted Date field and select the option “Fields…”, there you can specify the Format for your Date field.
Following these steps and saving the document, i could not reproduce your problem on LibreOffice version 5.1.6.2

And when you re-opened the document the date was still in the format yyyy-mm-dd? When I do, the date has changed to the form of dd-mm-yyyy - still.
